These little balls of goodness are a favorite around here. They come together quickly and seem to disappear almost as fast. I first found the recipe on Smashed Peas and Carrots and tweaked for our tastes. The original calls for coconut flakes but we are a tree nut-free home due to allergies so we substitute crispy rice cereal or finely-ground granola. As she says, this recipe is so darn customizable. The recipe below is for the base. Then add 1/2 cup-1 cup of goodies to the mixture. In the photo above I added 3/4 cups chocolate chips to one batch and other batch is 1/2 cup of pumpkin seeds and 1/2 cup dried cranberries.
- 1 c. oatmeal
- 3/4 c. peanut butter
- 1/3 c. honey
- 1 c. of crispy rice cereal or finely-ground granola
- 1/2 c. of flaxseed meal
- 1 tsp. vanilla
- PLUS;
- 3/4 - 1 c of goodies to mix in. See below for options
- Mix all ingredients above into a bowl until fully incorporated.
- Let chill in fridge for 15-20 minutes. Don't wait too long, or the balls won't form quite as well.
- Roll into balls. I use a tablespoon and scoop up just a smidge more than that to roll into balls.
- Store in the fridge up to one week or for an even chillier treat, freeze. We love them this way!
- chocolate chips (mini are the best)
- sunflower seeds
- dried fruit (cranberries, apples, cherries)
- chocolate protein powder
- espresso protein powder
- sunflower seeds
- dried marshmallows
- chunked graham crackers
- mini m&m's
