QUICK AND EASY ENERGY BITES

These little balls of goodness are a favorite around here. They come together quickly and seem to disappear almost as fast. I first found the recipe on Smashed Peas and Carrots and tweaked for our tastes. The original calls for coconut flakes but we are a tree nut-free home due to allergies so we substitute crispy rice cereal or finely-ground granola. As she says, this recipe is so darn customizable. The recipe below is for the base. Then add 1/2 cup-1 cup of goodies to the mixture. In the photo above I added 3/4 cups chocolate chips to one batch and other batch is 1/2 cup of pumpkin seeds and 1/2 cup dried cranberries.

Ingredients
  1. 1 c. oatmeal
  2. 3/4 c. peanut butter
  3. 1/3 c. honey
  4. 1 c. of crispy rice cereal or finely-ground granola
  5. 1/2 c. of flaxseed meal
  6. 1 tsp. vanilla
  7. PLUS;
  8. 3/4 - 1 c of goodies to mix in. See below for options
Instructions
  1. Mix all ingredients above into a bowl until fully incorporated.
  2. Let chill in fridge for 15-20 minutes. Don't wait too long, or the balls won't form quite as well.
  3. Roll into balls. I use a tablespoon and scoop up just a smidge more than that to roll into balls.
  4. Store in the fridge up to one week or for an even chillier treat, freeze. We love them this way!
Here are some of our favorite add-ins
  1. chocolate chips (mini are the best)
  2. sunflower seeds
  3. dried fruit (cranberries, apples, cherries)
  4. chocolate protein powder
  5. espresso protein powder
  6. sunflower seeds
  7. dried marshmallows
  8. chunked graham crackers
  9. mini m&m's
